Wow, this was fantastic! I used millet (?? That's what Google translate says 😅) instead of couscous which worked just as well (just needs to cook a bit longer). And I love spicy food and can tolerante quite a bit (for a European 🙃), but I left out the chili flakes bc my harissa paste ist already hot as hell 🥵
I acidently left the eggplant in the oven for a bit too long but it still came out amazing😋😋

Absolutely loved this recipe, I mealprepped the eggplants, froze them, and then reheated them in the airfryer when I finally got down to making this. The harissa-couscous is very tasty on its own as well. Note: I think there’s an error in the amount of “vegetable” balls given to you in the nutrition section from this recipe, might wanna check this out.

Was missing a few important ingredients (lemon, parsley, mint), it was still very tasty! Unfortunately the eggplant tasted a little watery, maybe it was low quality?

I had two eggplants and leftovers from the meal prep - cooked brown lentils and rice with seitan and vegetables. So I baked the eggplants and prepared the leftovers for the topping. It was really top. 😁 Although I haven't used the actual ingredients, the design was pretty similar 😅
