Hello! I want to make this for guests for Christmas, however to save me stress I wanted to make the dough the day before 😅 Would it be okay to store the dough with the filling in the fridge for a day and pop it in the oven the day after?

Heyy Gabi, aw thanks for thinking to include it at Christmas! You can prep ahead to save yourself some stress. I’d suggest making the filling and caramelized onions the day before and storing them in an airtight container in the fridge. Then keep the puff pastry separate until the day of baking. The pastry tends to soften and lose its flakiness if it sits overnight with the moist filling, so assembling and baking it fresh gives the best result. Hope it turns out well, and happy early holidays!✨

I'm planning on making this for my dinner guest this week, only I'm reluctant to use cranberries since I can't find any that come without added sugar (which I'm trying to avoid). I know, they're kind of the star of the show so maybe it's blasphemy to even ask 😅 but do you have any recommendations for replacing the cranberries?

Hehe not blasphemy at all, Maria 😊 You could try chopped dried apricots or unsweetened cherries for a similar sweet-tart contrast. Chopped dates may also be a good option. Hope your dinner guest loves it!

Quick update: we couldn't find any dried cherries so I ended up putting in fresh red grapes. It didn't quite bring the desired acidity but was a wonderful pop of hot, sweet fruitiness 😁

Made this for Christmas Eve dinner and everyone (all non-vegans) absolutely loved it!! I added a bunch of herbs and spices to the filling just to give the tofu more flavour (thyme, sage, dill, nutmeg, cinnamon, paprika, rosemary and parsley), and also added some pomegranate seeds for some brightness and zingy contrast. Paired it with the broccoli tahini salad - it was all soooo delicious!!

Made this for Christmas dinner and it did not disappoint! ❤️ The onions I had were pretty big so I just used 2, otherwise I followed the recipe. It was delicious, filling and looked so cute and festive! 🎄
