I made a curry for dinner today. And then after cleaning up, I saw this recipe that I absolutely wanted to try! I have beetroot wraps and planned on preparing this for lunch tomorrow.
Because I already cleaned up, I didn't want to cut the onion and garlic, roast the spices and do all of that again. I opted for a cheat version and used curry paste instead. To be honest I eyeballed the recipe but it still turned out great!
I used curry paste, yoghurt, a little bit of coconut milk, parsley, lemon juice, salt and pepper. It tastes really good and I can't wait to have it for lunch tomorrow on my wrap with some vegetables.
I imagine making this from scratch would be better and I'll definitely give it a go another time!
