The cooking time and temperature might need some adjustment. I put everything in at the suggested temperature. 45 minutes seemed long to me, so I set a timer for 30 minutes just to be sure. And came back to the oven with the corn and beans (and some of the bellpepper) absolutely incinerated... whoops! So I guess we're ordering in tonight and trying again another time

Oh no, sorry to hear this, Jess! Thanks for sharing your experience. We’ve heard a few similar reviews, so we’ve reduced the baking time a touch to help prevent this in the future.

In case it helps for next time, if your oven has a fan/convection setting, it can make everything cook much faster and can lead to exactly what you described. We use the top-and-bottom heating (no fan). If you’re using convection, it's best to lower the temperature a bit or reduce the bake time for our recipes 🤗 Really appreciate you giving it a go, and sharing your experience too as it really helps us improve our recipes. I hope round two treats you much better!✨

Did round 2 last night and it went much better! Baked the sweet potato and bell pepper for 35 minutes and only added in the corn and beans for the final 10 minutes so they wouldnt dry out, since theyre cooked anyway. Also didn't use the oven fan this time around. My partner and i both really loved the recipe! It was delicious

Really nice simple recipe. The only thing is that my veggies were charred after 30 minutes at 425 F and the ones on the edge of the oven were burnt to a crisp. Next time I’ll probably set the timer for 25 minutes and flip half way through.

So glad the recipe was enjoyed, Elizabeth! In case it helps, if your oven has a fan (often called a convection setting), it can make things cook faster than expected. We used the top and bottom heating option, rather than the fan setting. If you use convection, you could try reducing the baking time, lowering the temperature a bit, or switching to the top and bottom heating option next time. Happy cooking✨

The black beans and corn dry out and burn in the oven. Next time I will add them a bit later. Other then that its a nice and easy recipe

Hey Maas, oh no, we're sad that the corn and beans burned 🥹 If you give the recipe another go, it can also help to check if your oven is set to top and bottom heating (rather than fan-assisted/convection). Convection ovens circulate hot air, which can cause food to cook faster. Hope this helps for now, and that you're still able to enjoy the recipe 🫶✨
