I had been trying to incorporate more sweet potatoes into our diet because of its nutritional profile. This recipe fit the bill in spades. The contrast of sweet and savoy is great. It has allowed me to make larger batches of the fillings as the flavors are better the next day. The veggie ground is what I would call a taco or burrito filling. Having tacos one night and this recipe the next night, the flavors are so different that using the same filling is irrelevant. I have also topped it with chili or the burrito bowl fillings. This is definitely a keeper!!!

Perfection! It's super easy to make and very filling. I had to take a trip to a bigger store to get the veggie ground, beans, and vegan sour cream, but it was definitely worth it 👌
this recipe looos super interesting but im wondering what I can sub veggie ground with? it's not super available and whatever vegan ground is in store, it tends to taste like meat :(
Loved this! I used mushrooms instead of mince just because I had them and needed to use them. It was soo good.
