Never getting bored of this dish- so tasty and easy to make
Yet another wonderful recipe from PUL! Simple, healthy, delicious, no fuss to make, easy clean-up, and not safe old-same old. I wondered about there being no salt, but it was lovely! Thank you for being so creative and good at what you do!
This was sooooo delicious!!! I ate it with tortilla chips and I pickled my red onions. It was like indulging in nachos, but without any of the heavy stuff that makes you feel gross! 😂
I was a bit confused of whether I should drain and rinse my beans and corn (since I used canned), but I did rinse and drain them and it was perfect.
Didn't have chipotle adobo sauce or corn, so I added chipotle chili powder and frozen peas instead. Delicious, and can't wait to try with tortillas tomorrow!

Loved it! Rice, beans, veg, spices, what's not to like! Super easy to make, but my oven dish is having a good soak 😜 I wrapped this in a tortilla with some pickled red onions, avocado, jalapenos and hot sauce. It's great for an after work meal as the prep is very minimal and the oven does all the work. I'll be having the leftovers for breakfast tomorrow! Next time, I'll remember to buy coriander to add to the wrap, as I bet that will be even tastier!

This recipe made for some very tasty burritos! It is impossible to find chipotle adobo sauce here, so I just used some cayenne pepper and extra paprika. Will definitely make it again!

Loved this easy way to enjoy Mexican flavours. I don’t like soy yoghurt, so just topped the stew with lime juice and zest, coriander, avocado, and some vegan sour cream that I had. Delicious!

Loved this recipe! Very nice, I also made the soya yoghurt with cilantro. I made it for 2 persons, but then I had a lot of open cans with leftovers. So I decided to use the leftover ingredients to make a chili, added some more mixed beans and left out the rice. It’s now in my freezer to enjoy another time.
Very basic question: does this use chipotle sauce OR the adobo sauce that canned chipotles come in? Thank you!
