Spicy One-Pot Mexican Inspired Quinoa
This spicy quinoa comes together really quickly and just in one pot. So no need to dirty more dishes. The chili and jalapeños give the dish a spicy kick. The beans, corn, and tomatoes make the dish very wholesome and delicious. Combined with some lime juice and creamy avocado, this is a perfect weeknight dinner.Servings

Very tasty ☺️
Such a joy to put together using just one pot! My local grocery store doesn’t let me buy a red chili on its own, so I subbed a fresh jalapeño with the seeds removed and it worked perfectly! Another delicious and easy PUL recipe 🍅🥑🧄🧅
This is such a delicious dish ❤️ Loved it. Super quick and easy to make, also the first time i enjoyed eating quinoa 🙈 I dnt like the texture or the taste of quinoa 99% of the time, but in this dish it works so well. I might even try making it with giant couscous or rice next time 😊 Thanks PUL team ❤️
Oh and Happy Birthday to you all 🥳🎂💐🥂
We loved it 🥰 I used quite a bit of gochu garu instead of a fresh chili. On the second day we used it as filling for wraps.
Too spicy! But very filling and super simple to make.
This looks awesome 🤩
Definitely going to try that one out

Can I use rice instead of quinoa?
