I have just started a very demanding new job and had batch made these and froze them. I left out the avocado because I wasn't sure how it would turn out after defrosting and added vegan gyros pieces. Was very happy to have them on hand, absolutely delicious!

I made a double batch of these tonight as part of our big push to fill the freezer before our first baby arrives (in the very best future!) We've been told it's good to have options you can eat one handed 😅 I couldn't buy black beans in chilli sauce so I improvised by frying the beans briefly in a combo of tomato paste, garlic paste and ancho chilli powder. I also added in the pepper to cook them through a bit as I don't like peppers too raw. I stirred some fresh parsley and hemp seeds through the quinoa for some extra flavour and healthy fats. We had two of them for dinner and they were delicious!

Those are so good!!! Love these, we've eaten some right away and freezed the rest (I think I make small ones, was able to make 10 wraps, freezed half!). I'll come back and update on how the de-freezing process went when we'll eat the rest! I'll definitely make them again ^^

By the way, I tried to reproduce the adobo sauce by mixing my canned adobo peppers with some water and vinegar, but I would actually be very interested if you created a recipe to make this sauce, as I did the proportions quite randomly!

These look great! I was wondering, how does the avocado do when frozen in the burrito after it’s thawed? And what’s the best way to thaw?

Hey Courtney, thanks for the question! Avocado can become a bit mushy after freezing, but it still tastes fine when thawed. I found that the softer texture isn’t too noticeable, especially when mixed into a wrap like this. I like to take my burritos out of the freezer in the morning, and by lunchtime, they’re usually thawed. If I’m at home, I reheat them in a pan to crisp up the outside. If I’m on the road, I just eat them as-is. Alternatively, you can thaw them in the fridge overnight or reheat them directly from frozen in a pan, covered with a lid, and on low heat. Letting them sit at room temperature for a bit before adding them to the pan helps ensure the inside heats through without overcooking the tortilla. I hope this helps! 😊

My husband and I enjoyed these for brunch today, delicious! My husband occasionally will eat vegan meals with me and this was one of his favorite yet. Full of flavor, textures, and a well rounded meal.

Can you suggest reheating instructions from frozen?

So glad you enjoyed the wraps! To reheat the wraps from frozen, you can optionally thaw them overnight in the refrigerator. Then, you can either microwave them on medium for 2 - 4 minutes or bake them in a preheated oven at 350°F (175°C) for 10-15 minutes until warmed through. To add a crisp outside, you can optionally grill the wrap in a frying pan. Enjoy your flavourful breakfast 🤗
