We created our own vegan version with beans, veggies, and spices - inspired by the traditional Latin American and Spanish empanada.

These were super delicious! The PUL pie dough was perfect, and the empanada filling was easy to whip up. I couldn’t wait to eat the leftovers for lunch the next day.

I found a small round Pizza dough in my supermarket. Super easy to use for that. Great dish.
