Curried Raita Bowl
This bowl is packed with flavour! The base is a fresh, herby yogurt raita - a cooling Indian side dish made with yogurt, herbs, and spices. We tempered mustard seeds and cumin to enhance its flavour, then paired it with curry-spiced veggies and hearty lentils for extra nutrients. This delicious bowl is perfect for a light lunch!Servings

I made this to share with friends and served it along with some naan bread, and everyone loved it! I made more than needed and none of it is left 😇 It’s a rather simple recipe, great for meal prep and very flavorful. I will definitely make it again! 👌🏻
Such an incredible meal! Didn't have sweet potatoes or cilantro, so I swapped them out for normal potatoes and basil.
Delicious! I didn’t have fresh mint so I added 2 teaspoons of mint sauce to the raita. Worked as well
Wow, absolutely amazing, loved the raita. The roasted veggies very cozy and earthy, while the raita was creamy and refreshing
Looved all the combinations of flavors, and very easy to make as well, 10/10 for me!!
So many layers of flavor! I had not tried blooming spices before and adding it to a yogurt sauce, but it really elevated the dish. 👌
This looks so good, but I'm one of those people who think cilantro tastes like soap. Would parsley be an ok sub, or more mint, or another herb?
