Made this for me and my mom and she loved it! I did omit the coconut milk to keep it more to her taste and I added potatoes and leek for sweetness. We re not vegan so I added spots of cream cheese as garnish. Its sourness tied it together!
You really help us add more vegetables and legumes with your recipes Sadia and they never ever disappoint!! (I almost exclusively cook your recipes)

A good weekday dinner or lunch, especially for colder days. Nothing mind-blowing.
This was a “please give me the recipe” hit! I used kabocha squash (which I believe is related to pumpkin)- just what I had from the farm stand. I also used light coconut milk as I try to limit saturated fat, but I think for this recipe , full fat coconut would be better and next time, I think k I’d just allow the splurge of full-fat. With the cilantro and fresh squeezed lime as a garnish , it really was amazing. Interesting twist on a fall cozy dish.

Hi! I see a lot of recipes include a bouillon cube. Is there an alternative to use for it if that’s unavailable? Or can we scrap it entirely from those recipes?

Hey Manasa, you bet! The vegetable bouillon cubes and water can be substituted for equal parts vegetable stock or broth, adding salt or other spices and herbs to taste as needed 😊

This dish smells and tastes heavenly. I added some pan fried Tofu for more protein but might add some Seitan next time. It's such a joy to cook because of its rich flavors that develop during the process.
