I made this twice, it's very good! First time I made it as sandwiches like in the recipe, but it was a bit messy to eat, so today I made it as toasts and it was much easier to eat, I think I'll make it this way the next times too!

This lentil spread is soooo yummy! I was out of dates so I used some maple syrup to sweeten, wasn’t the right texture, but it was able to bring a similar flavor profile which went lovely with the curry lentils. I’m excited ti try this again when tomatoes are in season!
Absolutely delicious! The lentil curry would also make an excellent pita chip dip appetizer.
The combination is a dream. Only the eggplant did not turn out so well with so little oil in the pan the first time, so I roasted it in the oven this time - with more oil.
This is a great recipe when you want delish and fast! I was in a hurry so just added cubed mango and it was perfect!
