Vegan Tompouce - Dutch Mille Feuille

This iconic pastry, inspired by the French mille-feuille, has been a Dutch favorite since the 1800s. It’s known for its flaky layers, creamy custard filling, and signature pink glaze - though the glaze turns orange during Dutch national celebrations like King's Day or major sporting events to reflect the national colour of the Netherlands. But be warned: eating a tompouce can get deliciously messy! Some people dive in with a fork, others bite straight in (and deal with the squish), while some separate the layers to keep it clean. However you eat it, it’s always a delicious treat!

Why to press it with plastic till it cool off completely?
Plastic even when at normal room temp is mixing in food n getting into blood stream,, on heated surface is like.. 🙏

Hey there, Aakanksha! Thanks for sharing the thoughts 🤗 The cling film is only meant to touch the surface to prevent a rubbery layer that can form on top of custard as it cools. You can use parchment paper instead if you prefer.

Just made this for my partner who hasn't had a custard/creme slice since before he became vegan (10 years) and he was so so happy. Didn't have icing sugar so made a sugar syrup/drizzle and no stabiliser so used a couple of teaspoons of potaot starch which worked out great! Really great and easy recipe!
