Really, reallllly tasty, but the texture was quite runny… what might I have done wrong?

So glad to hear you enjoyed the flavour! If the mixture turned out runny, a couple of things might have happened. The most common cause is that the cream didn’t boil long enough. It needs a full, steady boil for the full 4 minutes so it can reduce slightly and thicken as it chills.

Another possibility is the type of vegan whipping cream. Some brands without a stabilizer don’t set as firmly as others once chilled. In case it helps, we use the is the Alpro brand. If you try it again, giving the cream a strong, bubbling boil and making sure it’s fully refrigerated for the full 8 hours should help it set properly. My mom said it was the best vegan dessert she tried so far. I wish the texture was a bit thicker, but flavour wise it was amazing

I served it for New Year eve ( i used Flora brand for the cream) and i tried two versions : pomelo and lemon, we loved it both so much, it's so fresh ( and it's so easy and quick to make) Bonne année !
