Made this today worked really well. It's a bit too sweet for me so I think next time I'll try reducing the amount of condensed milk. Also I rarely use sugar and used xylitol instead only to realise it doesn't help thicken like sugar does so I reheated the passion fruit mix and stirred in about 1/2 TSP of xanthan gum, worked perfect 😊
Wow, this was so delicious. I think I cooked the passionfruit jam a little long because it came out kind of caramel-like which made it great with the tartness of the passionfruit.

This ice cream is absolutely delicious! The coconut flavour is quite present (I made my own condensed coconut milk, I don't know about canned), but in combination with the passion fruit jam, it is really delightful!
