I just had my doubt for how long the peels had to simmer in the syrup. My thermometer bateries died right away and I was anxious not to see the peels turn transparent. I checked online and saw about 45mn which reassured me. The simmering time may depend on many variables, but it would help just to add an apprroximating time 🙏
I'll defintely make it again, including for lovely Christmas presents 🎁

Has anyone tried this with Coconut sugar?
Sadly, my thermostat didn't work well (but I didn't know) so I overcooked the syrup and it was very thick. But still the peels and the syrup are super delicious and the recipe is a good way to not waste any food.
We bulk purchased organic oranges this winter, and thought it’d be a cool exercise for fighting food waste.
Significant amount of time was spent to cut and cook the rind. My candied peel turned out soggy, more like preserved peel, perhaps I was conservative in the sugar-coating + the peel was sliced thicker than the recipe calls for.
It was a fun attempt, though purely for the amount of time needed to make it, I will use my oranges and rind for other quicker recipes :)
