one more question, when stored in the fridge , should they be on a paper towel in the container or parchement paper , wondered if they sweat ? thanks again

Hi hi! They can sweat a little in the fridge, but it's nothing too dramatic 😊 We like storing them in an airtight container lined with parchment paper so they don’t stick. If you notice extra moisture, you can dab it off or add a small piece of paper towel underneath, but it’s usually not necessary. Keeping them well sealed is the biggest thing to help them stay nice and chewy πŸ™Œ

I made these again for the grandkids ! I found this time i did not get as much fruit taste , maybe i needed a riper cantalope too. I have a jar of maraschino cherries and how nice that juice in it smells (types of cherries and juice we buy to make the kids beverage Shirley Temple 😊)- do you think this could be a good option for juice instead of apple and with another darker fruit ?

Aww love that you made them again for the grandkids, friend πŸ€— And ooh the maraschino cherry juice sounds like such a fun twist! I imagine it would work. Maraschino cherry juice is quite sweet and more candy-like, so pairing it with a darker fruit like strawberries or raspberries may help balance things out πŸ“ lighter fruits (like cantaloupe) are more delicate, so the cherry flavour could easily overpower them.

You could also try half apple juice and half cherry juice for a first test to keep it from getting too strong 😊 let us know how it goes if you test out any swaps!

I made these today ! I just had a few questions ; I blended the fruit in my Vitamix , i did not find there was much to strain , there was mostly foam left in my strainer so my question is ,should we put the foam with the blended fruit to go on the stove ? and

when it said to bring the mixture to rapid boil, do we do rapid boil as well for 5 minutes or do we reduce the boil strength a bit ?

I think I will try with other fruit as well , It was not a strong fruit taste but family liked them , thanks

Hey friend! It sounds like the foam is air from blending, so it’s fine to mix it back in before cooking or you can leave it out. Straining the mixture gives the snacks a smooth consistency, but it's not entirely necessary. As for boiling, you should keep it at a rapid boil, but if it looks like it might overflow you can lower the heat slightly. The high heat helps to activate the agar agar and evaporate extra water. Hi Honor! You can use fruit juices if you prefer! We liked the sweetness from apple juice with the melon, but we imagine quite a few other juices would be just as lovely!

You can use other fruits, but the texture might vary slightly. If you are substituting, try to use the same weights for the best results.
