Absolutely DIVINE! I had this with some safran flavored rice, it was amazing. I think for next time, I will let some tofu marinate in the sauce as well for more protein!

My husband has never been a fan of eggplants, but I decided to give this recipe a try anyway. I asked him to taste just a little… and to my surprise and also to his surprise 😉, he loved it! He even requested it for dinner tonight — so guess what’s cooking again? 😊 Delicious recipe!

Very (nice) intense taste, perfect softness of the inside and slightly crunchy outside. Would recommend rice a side dish to balance the flavour bomb 😊

Hi hi, Jonathan! You can likely make this in a regular oven, too (though we haven't tested it yet ourselves). I'd reckon you could roast the whole eggplants at 400°F (200°C) until soft, then slice, add the sauce, and bake a little longer to let the flavours soak in ☺️

I went and prepared it in my regular oven (same temp and fan assist) and it was delicious. The dressing to put on the eggplant was much runnier than the pictures showed but most of it stayed in the eggplant. Definitely one to make again.
