Seitan Prune & Apricot Stew
Inspired by Moroccan prune and apricot tajine, this stew strikes the perfect balance between sweet and savoury. Tender seitan simmers with a fragrant blend of Ras El Hanout spices, prunes and apricots adding natural sweetness. Served over fluffy couscous with toasted almonds for crunch, this dish is packed with comfort.Servings

Easy to make, tastes complex, freezes well. Great recipe.
@PUL - I’ve cooked with yr app every day since the beginning ☺️ ✨ Could I make an app development suggestion? Could you mention if a recipe freezes well (or doesn’t freeze well, if that’s easier) as it would be really helpful for planning batch cooking? TY for the consideration!
I'm not a fan of Moroccan cuisine, but I happened to have all the ingredients, including homemade seitan, so I gave it a shot. I'm still not super convinced about the flavor profile, but it's a great filling dish, perfect for those cozy winter dinners.
It looked quite liquidy and questionable at some point but it turned out super good :) especially with the cilantro. I substitued the seitan with tempeh because I couldn't find seitan in the Albert Heijn but tempeh works great as well!!
