Decent! I would recommend 4 or 5garlic cloves at least though. Additionally, I found that even after baking for longer than recommended, the vegetables weren't cooked through. I'll part cook them before baking next time
I made this in an air fryer, it took 25 min for everything to bake through.
It feels very healthy and was easy to make, so I plan to include this into my weekly dinners on rotation. However, maybe I did it wrong, but it could have more flavour. I guess I should be more generous with the amount of the chimichurri sauce. Also, the broccoli and the onion bake much faster than the potato and the carrots, so I would recommend to adjust the recipe accordingly.
I loved this dish. I made it with dried herbs because I didn’t have fresh and this recipe was still delicious. Next time I’ll make it with fresh herbs because it’s going to be in my weekly rotation.
So tasty and easy, made double batch and kids and non vegan guests ate well. Used new potatoes, Manitoba grown, and was spectacular
Great dinner! Comes together very easily and it’s really tasty. For us, the potatoes did need quite a bit longer to cook through, so from now on, we pop those in the oven while we prepare the rest 😊
This is a filling dinner! My family(all meat eaters) loved this dish. My dad loved the flavors of the Chimichurri sauce and how well they complimented the vegetables. All really loved how light and filling the tofu was compared to meat, plus it was an easy prep and clean up. This is a really good dish to bring to family gatherings to have some good flavors, full of fiber and micronutrients, plus it’ll make your meat eating family say “I can’t believe it’s not beef!”
This is one of those meals that looks - and tastes - fancy but is simple to make and absolutely delicious.
