Hearty Bean & Barley Stew
This recipe is inspired by riÄet (pronounced "ree-chet") which is a traditional barley soup enjoyed in Bavaria, Austria, and Slovenia. It's a kind of thick stew or porridge made primarily from barley, vegetables, and often some type of meat like smoked pork or sausages. Delicious and hearty! I batch made this for the week and looked forward to it each day. Good value for money. I swapped vegan bacon for olives which worked well :)
This was delicious and filling. We skipped the vegan bacon bits, used half pinto beans and half kidney beans, and for one of us added more spice in the form of red chili powder. Both of us loved it :) Planning to keep it as a regular meal in the house.
I enjoyed this recipe! I swapped the vegan bacon bits for smoked tofu, which added a great texture and smoky flavor. The combination of barley, pinto beans, and fresh veggies made it super filling and comforting. Perfect with a slice of rustic bread on the side!
This recipe was very easy to make and very comforting! I'm not a huge fan of brussel sprouts, but the way they soaked up the flavor of the broth really made them tasty!
We couldn't find barley at the grocery store, so we used buckwheat as another commenter mentioned. Turned out pretty good although I know I'd probably enjoy it more with barley āŗļø.

Was really tempted to substitute chopped beet stems for the celery/celeriac since I had some in the fridge, but went with something closer to the original recipe for the first try.
Will I tweak it, yes. Did I love it, yes indeed.

This was delicious. I fed it to myself and three other hungry people and we still had another serving left. So Iād say this could feed five. When I make it again, I may do slightly less millet and more brussels sprouts because the brussels were the best part imo! :)

I switched the barley for red lentils because I don't like barley, and went with vegan sausages instead of bacon. Wonderful warming stew.

Great recipe! Hearty, and freezes great! I only had pearl barley, so I added it with the water, and added extra water to compensate - if you do this I would recommend adding more boullion.

Delicious and wholesome. I used chipotle powder because I didnāt have smoked paprika. It was a tad too spicy but by eating the stew with plain yogurt it was fantastic!

Couldnāt get vegan bacon so made without. It was a bit bland and quite a big portion.
Advise cooking a smaller amount and hopefully the vegan bacon lifts it. Very filling and warms you up though āŗļø
