This salad is in my regular lunch food prep rotation. It uses ingredients I don’t normally use so is a very nice change. Because I want it to last for the workweek, I always put it over greens and keep the greens, breadcrumbs/capers, pine nuts, and dressing separate. I also double the dressing, breadcrumbs/capers, beans, and cuke to ensure it lasts all week. The dressing is so bright and refreshing!
A bit heavy in oil due to the artichokes and peppers but sooo good. I had it many times

Such an interesting, tasty and satisfying salad. Chose this recipe to use the rest of my dill. I like that it used ingredients I don’t gravitate to. Enjoyed the diversity of sensations and flavours! Some spice with the cooling cucumber. The wet with the crisp and crunchy. The tangy with simple savoury. I had it with toasted rye and ate it half like bruschetta. Only downside was i found it a lil messy and fiddly to assemble.
Loved it. Really refreshing for summer! I toasted panko instead of breadcrumbs and added pumpkin seeds instead of capers/pine nuts as I didn’t have those.
Ate the whole thing in one go!

Again super delicious and a very different salad experience. I used dried beans and left it in water over night and boiled 40 minutes. For the peppers I couldn’t find ready made in store so I chargrilled my fresh peppers in the fire of my gas stove. Fun time passing ! Turned out very good. Needs good time management especially with the beans if not out of a can. 10/10 the sauce was super good
Ok this was so satisfying! I just had it for lunch and it might be my favourite recipe from the app so far. Everything goes so well together and it feels really nutritious and wholesome. I added a bit of leftover vegan feta and next time I think I'll throw in some rucola. Because I'll be making this a lot.

I wanted to try something new, this wouldn’t I be something I would normally make. I was surprised by how good the ingredients combine together. Especially the jalapeño. It’s not like I would make this every week but I’m glad i tried.
This was delicious! I didn't have enough dill, but it was still flavorful. Instead of pine nuts, I used a mixture of sunflower and pumpkin seeds and roasted them with sumac and allepo (since they were unroasted and I've been wanting to try that seasoning combo for a while). Instead of roasting the bread crumbs on the stove, I used the oven since it was already on for the seeds, and this worked for me. I may add more lemon juice next time, but my husband liked it as is (he is less obsessed with citrus compared to me :))

Excellent salad! I sauteed the pine nuts in the initial step, which worked out well. Unfortunately, no fresh dill at my supermarket, but the dried added some nice flavour (3 tsp).
