The lentil/dressing/parsley combo is a great base for salad. It’s summer here in Australia…and mango season! So, I swapped in some mango and tomato and lettuce - for a more simple but delicious salad :)

My new favorite salad this season! So refreshing and healthy! I made a few adjustments to incorporate some seasonal fruit, and used baked halloumi instead of feta. It was absolutely delish! Thanks for the inspiration, PUL team 💛

Yessss! Easy and healthy. Added some pickled jalapeños and I baked some tofu in cornstarch with salt on the side. YUM
