This salad is absolutely delicious! It‘s very easy to do but looks and tastes very elaborate. I‘ll keep it in mind for when I‘m cooking for guests.
In Germany I bought Ebly wheat, which cooks in only 10min.
For me, the recipe made 2 servings as a main dish.
Honestly, this dish is one of my favourites! It's sooo incredibly delicious. The dressing, pumpkin in a spice rub, and all other goodies. The instruction about time and temperature is on point. I swap for black rice. Made it already three times and many more to come. Thank you <3

This recipe is my new favorite salad for fall.
Most of the ingredients can be locally sourced. For example, I used Franconian green spelt, Hokkaido pumpkin and lamb's lettuce.
This recipe was absolutely delicious and packed with flavor! I swapped the wheat berries for quinoa, which worked perfectly, and air-fried the squash for a crispy, caramelized finish. It’s a hearty and satisfying dish that I’ll definitely make again.
This stole the show at Thanksgiving - it is absolutely delicious in multiple ways!

I'm excited to make this for the first time for next week! However, I would like to add some protein as we would have it as a main. My parents not being a fan of soy products (omnivore) I was thinking some brown lentils would be great, but would like to have your opinion on it 😊

Perfect salad! Kabocha is my favourite squash. 🤍 In this recipe, I didn’t peel the squash and it turned out extra crunchy. I also swapped for quinoa instead of wheat.
PS: 100g of quinoa is enough for 4 servings.
Delicious ! Kabocha squash took me very long to cut and prepare - any tricks ? Took me 2h instead of 45 min but honestly very good and the squash was special - will do it again! 🙌🏼☀️
Delicious dressing and a hearty salad. Made it with delicata squash and it was still great :)
