I make this salad so often, it really works well as a meal prep, too. 😋
My partner hates potato salads but this he loves every time I make it! Very tasty dish! I personally need a bit more dressing for the whole batch but maybe my ingredients are just not as tangy to begin with. Perfect with some (vegan) Feta and some white beans for protein 🤤

Great potato salad! Apart from having only a few ingredients and being rather easy to make, my favorite part has to be the dressing!
A perfect side dish
This was really good :) whole family loved it (including two rather picky girls). Next time I’m gonna cut back on the apple cider vinegar a tiny bit, but this is just a personal preference. I will definitely make it again :)
Had to use dried dill and parsley, but this is really good! I was just looking at the new recipes and I saw this pop up and I had everything to make it! Another keeper.
