That was very good! The texture of the steak is very satisfying, the sauce works well with it and adds depth, and the potatoes are crispy outside and mashed inside, very tasty! The beetroot cannot be tasted at all. I used only half of the liquid smoke, as I was scared to add too much, and it was very good for me, the smokey flavor was there, so I guess my liquid smoke might be quite strong. I used artichoke instead of the asparagus because that's what I had. Lovely filling dinner that was greatly appreciated! (Also I used Merlot wine, is there a particular reason why in your recipe it's often non-alcoholic drinks that are used?) My sauce worked out pretty good, and I prefer to not strain it!

We often choose non-alcoholic options in our recipes to keep them more accessible for people who choose to avoid alcohol, but Merlot wine works just as well here. Not straining the sauce is also totally fine, especially if you enjoy more texture! Thanks again for taking the time to share 🫶

Hi, I'm planning on cooking that meal this weekend, I have ordered liquid smoke but have never used it, is 2Tbsp a lot of liquid smoke? Is there differences in intensity between brands that I should be aware of?

Hiii Nohya! For many recipes, 2 Tbsp of liquid smoke is indeed a lot, but it's intention in this recipe to give the steak a meaty flavour, and it's balanced by the beets, spices, and the vital wheat gluten. That said, there are differences between brands. Some are more concentrated and have a sharper smokey flavour than others.

You can totally start with 1 to 1½ Tbsp, and if you ever make it again in the future try more and see how they compare. Hope you enjoy the meal this weekend! Let us know how it turns out 🫶

The texture and look of this steak is so similar to animal flesh that I couldn't bring myself to finish it. If you are vegan because you don't like the taste and texture of meat then this is not a dish for you.

I liked this recipe but my seitan was a bit jelly. It didn’t look much like the one from the recipe so I’m not sure what could go wrong. I kept the same proportions but divided seitan into 3 portions. I was steaming in for a bit longer than in the recipe as it felt undercooked. Any suggestions would be appreciated :)

Hey there, Caramella! Thanks for trying the recipe and for your question. The thickness of the pieces can affect the interior texture. We suggest trying to flatten the pieces so they are no more than 2 cm thick. Anything thicker than that will need longer steaming time, so it sounds like the adjusted steaming time was the right move, but perhaps add a few more minutes so that the middle has some resistance. You could also add a bit of chickpea flour, regular flour, mashed beans, or extra beets to help mix with the gluten. Pure gluten will retain a "jelly" texture.

Hi Jams! No kneading is needed for this recipe because blending the ingredients in the food processor develops enough gluten to give the seitan texture 🤗

Delicious!! Made this together with my husband (who is not vegan) today. We both loved it! With two people cooking it took much less time than the estimated 1h 40min to make. Will definitely make this again!

PS: We added 3 extra tablespoons of water to the seitan dough in the food processor. It looked a bit too dry in comparison to the photos, and adding a bit of water fixed it. Texture and taste was fantastic!! 😃😃

Hey! I was super excited to make this dish but sadly did not hit. I messed it up somewhere but I’m not sure where. I think it was steaming it. Not sure if my steamer was too small and also the “meat” got stuck to the steamer so when it was time to put it on the skillet it wasn’t cooked through. In the end it was burnt on the outside and raw on the inside. Any insight/feedback? The asparagus and potatoes were delicious :)

Hey Katherine, we're sad to hear about the trouble with the seitan steak! It's possible your "steaks" were thicker than ours, which might have needed more time in the steamer. We will update the recipe to make it more clear. We do use a parchment liner under the seitan while it's steaming. Was the water in the steamer boiling rapidly? If you think your steamer just can't accommodate the seitan, you could bake it on the tray with the potatoes instead, it might result in a slightly drier outside, but since you end it with basting, it shouldn't make a big change to the overall flavour. Good suggestions. I’ll try that next time and see what happens. I did turn down the heat because it was making a squeaky noise and I wasn’t sure if that was normal so the water probably wasn’t at a rapid boil.
