This incredibly vibrant oat recipe gets its colour from beet juice. Chopped chocolate and applesauce add a rich sweetness and help counteract the earthy flavour of the beets. The creamy, tart yogurt and stewed berries elevate this oatmeal to a whole new level, creating a perfectly balanced and indulgent breakfast.

So incredible! I’ve made these oats before the recipe update, and I’m in love! I love juicing my own beets, so it’s always so fun to make this recipe. I didn’t have sweetened vanilla soy yogurt, so I did unsweetened almond yogurt and added a splash of maple syrup to make up for it. Came out perfectly!

I did some adjustments, and it turned out delicious. I am very surprised the texture and taste were so good. I used almost twice as much vanilla bean extract and stevia. I like it sweet.

I have not Trier this before the update, but I really enjoyed it. I never have apple or beet juce at home, so I used an apple and some roasted beet. I turnen them into blended oats and with 100% chocolate and strawberrys on top even my 6 year old loved it. She asked for second and thirds. We will repeat.

This was a surprising breakfast, but I liked it very much. The fact that other flavors mix with the sweet fruit, helps elevate it. The stewed berries are not optional for me. And it looks soo pretty 😋

So glad that you enjoyed the beet overnight oats, Sabine! 😊

🌟 RECIPE UPDATE: To improve the recipe, we’ve replaced the unsweetened soy yogurt with vanilla soy yogurt, added more applesauce, and dropped the amount of beetroot juice used which gives the oats a sweeter, more balanced, and less earthy taste. We hope you enjoy the updated version! 💛 xo, Sadia (8 Nov 2024)

Yummy and healthy. If you have beet juice, might as well give pink oats a shot!

Hmm, not a favourite. I think that I will stay with the other overnight oat recipes😊

We're sad to hear you didn't love it, Louise! It's an earthier flavour of oats and might not be to everyone's taste. If there was anything you didn't like in particular (such as the taste or texture) we'd love to hear more to improve 🤗

I definitely think that it is a matter of taste, and so sorry for basing my review on such things🙈 I think that the texture was fine, as the yoghurt gave it a nice velvety texture. It is the flavour that is too earthy/metallic and bitter despite the applesauce. Perhaps it is too much with beet root juice and dark chocolate/cacao nibs? Could it be milder is using white chocolate chips or similar?
PUL Team - April 16, 2024, 10:02 p.m.
No need to apologize, Louise! It's so appreciated to help us improve. Dark chocolate cacao nibs can indeed impart a bitter flavour. Using a lower percentage of dark chocolate (such as 70% instead of 90%) or white chocolate chips could help. A swirl of maple syrup could also help to mellow out the earthy flavours 😊

This has been my breakfast for the past 2 weeks ! I switched the vanilla extract with a little bit of Agave syrup and it’s super delicious and nutritious! I’m not a fan of beets but I know how good they are for our health so I decided to give it a try and I’m glad I did !

Can you elaborate on beet juice recipe? Is it from raw beets or cooked?
PUL Team - Feb. 16, 2024, 10:07 a.m.
Hi Divya and Ronak, thanks for your question! You could use either. We bought a 100% beet juice from our local grocery store, but you could make your own juice from raw or cooked beets, if you have a juicer at home, or you could blend the beets and strain to get juice. Hope that helps!
