High Protein Peanut Butter & Jelly Smoothie

This smoothie gets its creamy, protein-rich base from silken tofu, soy milk, and peanut butter. The timeless combination of peanut butter and berries adds a delightful touch to kickstart your day, while banana brings natural sweetness and oats help make it extra filling. It’s quick, wholesome, and almost milkshake-like in the best way.

Ingredients

  • 5.3 oz (150g)
    silken tofu
  • 1
    frozen banana
  • 1¼ cups (300ml)
    unsweetened soy milk
  • 1 cup (130g)
    frozen mixed berries
  • ¼ cup (65g)
    natural peanut butter
  • 3 Tbsp (17g)
  • 1½ Tbsp (23ml)
  • 2 tsp (10ml)

Optional garnishes

  • natural peanut butter
  • banana chips
  • freeze-dried strawberries
  • chopped roasted peanuts

Directions

  1. Place all the ingredients in a blender.
  2. Blend until smooth.
  3. Pour into glasses and garnish as desired. Enjoy!

Notes

  • Nutrition tip: To keep this smoothie high in protein, we recommend using soy milk or pea milk. Other plant milks will still work, but they tend to be lower in protein.

Storage

  • This smoothie is best enjoyed immediately.

Hey everyone!

Just wondering if anyone has successfully switched frozen berries with berry compote for smoothies?
Our supermarket frozen berries have sometimes been recalled due to suspected Hep B contamination.
Have mostly just been cooking/baking berry recipes but really hoping to get back to smoothies for breakfast!

Appreciate your thoughts! 😊

Hey hey, Pratyasha! Oou, we’ve not tried this before. We imagine a berry compote could work, although the flavour and texture may be a little different from using frozen berries. The smoothie may turn out a bit sweeter and more liquidy, and the berry flavour could be more concentrated and less fresh or tart depending on how the compote is prepared. You could start by adding a little, then add more to taste, and adjust the amount of plant milk accordingly. Keen to hear if anyone else has tried this and how it turned out 🥰

This recipe looks delightful! Do you have any substitution suggestions for silken tofu? I've been diagnosed with hypothyroidism and have been asked to limit soy intake.

Thanks so much, Manushi 🫶 You could try replacing the silken tofu with an unsweetened, soy-free Greek-style plant yogurt for a similar creamy texture. Alternatively, a spoonful of seeds like hemp and a splash more plant milk, as needed could work nicely 🤗 hope you enjoy the smoothie!
