Hi Elizabeth! We imagine whole wheat pastry flour could work well here. WW pastry It’s lighter than general whole wheat, so the pancakes may be slightly more tender and a touch less fluffy than with all-purpose flour, but still delicious. We’ve heard positive reviews from several people who’ve used regular whole wheat flour with positive results, although we haven’t tested either option ourselves. We’d love to hear about it goes if you experiment with it✨

Thanks for sharing, Lexy. We use soy milk here because when it’s combined with a splash of vinegar it curdles into a quick vegan “buttermilk,” which helps make the pancakes extra fluffy. If you’re not a fan of soy, we suggest using pea milk as the closest swap, since it’s also higher in protein and tends to behave most similarly in this recipe. Lower protein milks like almond, rice, or cashew can work in a pinch, but the pancakes may turn out more gummy and less fluffy. Also, if you see the little green arrow next to an ingredient in the recipe, you can click it to see our substitution suggestions, and for this one you’ll see pea milk listed there :) I hope this helps in case you give the recipe another go!

Very yummy but also very filling. When cooking they start to stick straight away, but that could have been because I didn’t use a non stick pan and I use coconut oil instead of vegetable oil. Also I loved just the pancake by itself. But still the best pancakes ever!!💜

I had to use whole wheat stone ground flour since I ran out of all purpose, which I thought would set me up for rock hard pancakes. Instead, I had the fluffiest, most light pancakes that didn’t even taste like whole wheat! This recipe is magical. For U.S folks, I used silk plain soy yogurt, which worked really well.

So glad you enjoyed them, Jenniffer, and the cinnamon swap sounds so good! We add the white vinegar for a couple of reasons. First, it helps activate the baking powder, which makes the pancakes extra fluffy. Second, it mimics what buttermilk does in traditional recipes by adding a bit of acidity and tenderness. Since we are using soy milk and soy yogurt here, the vinegar helps recreate that slight tang and gently curdles the mixture, making the batter thicker and the pancakes extra soft and rich ☺️

Hey Katrina, thanks for your question! 🤗 It sounds like your batter might be a bit too thick, possibly from overmixing or using too much flour. Try adding a little extra soy milk to loosen it up and mix just until combined – a slightly lumpy batter is totally fine! If you're using cup measurements instead of grams, lightly spooning the flour into the measuring cup and levelling it off with a flat edge can also help prevent adding too much flour.

I used spelt flour for this recipe and it came out terrible!! Just sharing so no one makes this mistake. My pancakes were so dense and wet inside no mater how long I kept them on the fire. Or maybe because I used Greek yogurt!! Idk but just stick to exact. Recipe.

Hey Eden, aww spelt flour absorbs liquid differently than all-purpose flour, which can make the batter too thick and lead to dense pancakes. The Greek yogurt might have also played a role if it was thicker than soy yogurt, affecting the moisture balance. Letting the batter rest and adjusting the liquid might help if using substitutions 🤗

Excellent pancakes! Would say unless you have really brilliant non-stick to use marg or vegan butter on kitchen roll to grease the pan between batches. These types of fat have water & oil in an emulsion which creates a better barrier between the batter and the pan. I started with oil as suggested in the recipe but had far more success with vegan butter. Will definitely be making these again though!

I love how simple and delicious this pancakes are! They are best when eaten freshly made so I wouldn’t recommend to fry all of them in one go as they get a bit gummy in the fridge for the next day. I swapped white vinegar to apple vinegar and I couldn’t taste it at all. Im vegetarian so I also used fat free Greek yoghurt in this recipe and it worked well. :) I’m getting requests to make them again soon so it must be good!
