This is absolutely delicious!! I used about 450g of roasted dark red beets. The sauce came out bright magenta, so a bit different from the photos here. 🤭 My beets were particularly sweet from roasting, so I needed more lemon for balance. I will definitely make this one again.

This was so much fun better than I expected. I’d rate it as phenomenal. It’s so so creamy and delicious. I used soba noodles instead of spaghetti. Highly recommend!

Best beetroot recipe ever!
Portions are a bit small, but we just make more or make a salad on the side. Also to reduce costs we use half pine nuts, half sunflower seeds. Makes it just a little bit less creamy, but a lot cheaper! Also tried to swap out the pine nuts completely for sunflower seeds, but that made it significantly less tasteful. Hope this helps someone :)

Question for you! I tried making this and the taste was very beetroot, not so much the basil? Anything I could do? Or may have missed? The only thing that o forgot to follow was toasting the pine nuts - and the color also looks like beetroot, not like the recipe picture

Thanks so much for giving this recipe a try and for sharing what you noticed, Jaya 🤗 A strong beet flavour can happen if the beets are on the larger side, so if yours were bigger, that would explain both the deeper beet taste and colour. For us, 3 cooked and peeled beets weighed about 500g. If you have any leftovers, adding a bit more basil, lemon juice, and salt could help balance things out, or a little extra nutritional yeast or garlic could also bring back some savoury depth.
Toasting the pine nuts also makes a difference. It adds warmth and nuttiness, which helps round out the earthiness of the beets and lets the basil shine more. For next time, you could try using slightly smaller beets, or start by blending in two and tasting before adding the third. Hope this helps for now 🫶

Delicious. I used beets from my garden. Would only use 30g of pine seeds next time - this time I used a packet of 80g and the taste was a bit too dominant for me. Fabulous and fun colour.

Hey Sandra, we're glad you enjoyed it! We haven't tried but we imagine the beet pesto itself freezes well. It might be best to cook the pasta just before you want to serve it - we find thawing frozen cooked pasta can affect its texture 🤗

Hey, We have made it his recipe today and it was delicious. But, we also had the feeling that the quantities we used were a bit off. We have our home grown beetroots and some were quite large. How many gram is one beetroot for you?

Very tasty and so quick and easy to make. I did have to loosen the pesto mix substantially when reducing the portion size to one, but it certainly didn’t detract from the deliciousness.

Beetroot mass would be helpful, ours came out very soupy when made to the proportions provided. Assuming our beetroots are massive, will be trying again with one or two.
