Hello, isn't there a step missing ?
We use 1L of water to cook the pasta but then we add the rest of the ingredients without throwing away the pasta water ? Seems highly unlikely.

May I ask if you scaled the recipe? You mentioned adding 1L of water to cook the past, but the original recipe (for 2 servings) says to add 2 cups (480ml) of water. But indeed, the recipe is designed so the pasta cooks in the same pan and absorbs most of the water as it simmers. By the time you add the remaining ingredients, a lot of the water will have been absorbed by the pasta, and the rest turns into part of the sauce and helps everything come together nicely!

If you do find there’s still quite a bit of water left in your pan, you can totally let it cook off a little longer uncovered before adding the rest, or drain a small amount if needed. Hope this helps for now 🫶

Can you give some examples of specific brands/items that would count as the veggie ground ingredient?

Heyy Katie! Our veggie ground is from a local grocery store called Albert Heijn. It has a dry texture and resembles already-cooked ground meat, so it's most similar to an already-made ground mock meat. Other brands that offer similar products are Vegetarische Slager and Vivera. If you don't have access to any of these, another alternative is something like Beyond Meat, but these usually need to be fried a bit first to brown them, and then you can use them as we did in this recipe.
