I wish I could add pictures. These turned out great! And we did not have cornstarch and added rice flour instead. Still great. Nice, chewy and something different!

My god! These cookies are sooo delicious! They are even better than the original ones non vegan. I've added orange blossom water, just because I had to use it somewhere😁 and it added a little something😊

We haven’t tested this recipe without aquafaba, so we can’t say for sure how it would turn out. You could tryyyy substituting it with a bit of unsweetened applesauce or a flaxseed mixture (2 Tbsp ground flax + 1/3 cup water, left to thicken for a few minutes), but if it works, heads up that the texture will be quite different. If you give it a try, we’d love to hear how it goes ✨

I made them with a flax egg instead of aquafaba and I would say they turned out delicious! I don't know how the consistency compares (especially since it's all almond flour) but I would make it with a flax egg again for sure!
