As I love lemon and raspberry everything and your chocolate chip cookie recipe, I couldn’t wait to finally try these. The taste was great but I was a bit disappointed by the visual result. How come your raspberries still look so fresh and pink? Mine were all black and burnt after baking. I did everything as written in the recipe. Would love your feedback so I can perfect them on my next try. Thank you for everything :)

So glad you enjoyed the flavour, Anna 😊 Hmm the darker colour may have happened if the freeze-dried raspberries were more exposed on the surface of the dough or a bit closer to the heat source. Some ideas that could help: try pressing a few raspberry pieces into the tops right after baking; lower the oven's rack if your oven's heat comes more from the top; fold in the raspberries a bit more so they’re less exposed while baking.
Can I also confirm your oven bakes without a fan on? We used just top-bottom heating (no fan). If the fan is on, it can make baked goods more prone to burning/cooking faster than intended.
Some ovens also just run a bit hotter, so if you already did all the above, it could just be a matter of dropping the cooking time by a couple minutes if you ever give this recipe another go. Hope this helps for your next batch 💗

Heyy Anaya! It’s a lovely question 🫶 we enjoy using freeze-dried berries because they add a concentrated flavour without extra moisture, so baked goods stay nice and chewy. Another option could be raspberry jam if you can’t find freeze-dried raspberries. For example, you could swirl a little into the dough or even into the centres before baking for a similar flavour and slightly softer cookie texture.
Alternatively, if you happen to have dried berries like dried cranberries, these can work too. Or even chopped dried mango or apricot. Hope this helps, and we’d love to hear what you end up trying ☺️

Delicious, fairly quick and easy to make, and a real crowd pleaser! I nearly doubled the amount of lemon zest (my lemon was quite big), but I think I'll try to also add some lemon juice next time to add some more lemony taste.

Wow, didn’t expect it to turn out this good! These are the crunchy type cookies and I love that. Added some lemon juice to the batter because it was looking a bit dry mad used freeze dried strawberries instead
