These cookies have a chewy, soft centre, slightly crispy exterior, and a delightful coconut sugar crunch on top. The cinnamon and ginger give some tropical warmth to these delicious cookies, and the dried pineapple adds a subtle touch of sweetness - or swap the pineapple out for any other dried fruit you enjoy, and serve with a warm cup of tea!

These are my absolute favorite cookies! I never expected it but the combination of cinnamon and coconut and ginger is just amazing! Granted - I didn’t put pineapple in it, I use dark chocolate chips instead. :)

These are lovely and quick to make 😍 Great texture and the flavours work together wonderfully! I wonder if you could use coconut oil instead of the butter and coconut milk to enhance the coconut flavour?

Hey Sanna, so glad you enjoyed them! Coconut oil and coconut milk sound like fun swaps to boost that tropical vibe. The texture of the cookies miiiight be slightly softer. If you give it a try, we’d love to hear how it turns out ☺️

Delicious! 🥰And quite easy to make. I used cranberries, and what a perfect combo cinnamon + ginger! I made the preparation in the evening, left in the fridge for the whole night and made the cookies in the morning for breakfast and it was just perfect
