Vegetable Fried Kamut
This is a slightly more substantial alternative to the more common vegetable fried rice side dish. The kamut has a bit of a nutty flavour and its large size gives a wonderful texture. Using leftover kamut helps to speed up this recipe, but if you don't have any, using freshly cooked kamut works just as beautifully.Servings

I made this with leftover rice and subbed spinach for cabbage. It was a good fried rice to add to the rotation now that we have a big tub of doubanjiang.
Simple and delicious, I love the chew of kamut!
