Inspired by the classic instant noodle packs, we wanted to create a more wholesome homemade version. The soup gets the umami flavour from the bouillon, teriyaki, and soy sauce. Together with the soft rice noodles and some fresh veggies, this makes for a delicious meal that can be taken on the go.

Delicious! That was a hit, my partner and I really liked it. Made my own tereyaki sauce and used the homemade seitan mock meat from PUL. Instead of reduced in salt soy sauce , i used tamari ( normal). Thanks ☺️

Anyone have a recipe for mock beef? Do y’all generally use seitan?

Thanks for the question, Catherine! We don’t currently have a dedicated mock beef recipe, although hopefully one day we'll create one! The mock beef we used here was store-bought. In case you would like to use seitan, we have two seitan recipes: “Homemade Seitan – Mock Meat” and “Washed Flour Seitan”. If using homemade seitan, just be sure to give the soup a taste and add more seasoning or sauce as needed. If you’re looking for something less involved, oyster mushrooms are another alternative we’ve heard positive reviews for. Hope this helps for now! 🫶

Adding this to my weekly Rolodex. Soooo delicious. I used boiled potatoes in place of corn. The vegan meat I used was beyond meat steak

Not really very keen on this. It’s quite difficult and messy to eat, and the taste is a bit too savory. Perhaps meaty? Difficult to describe - I’ve had enough after a mouthful or so. I’ve made it a few times and always hoped I’d like it because of the protein content. Will rotate to the next protein rich recipe 😊

Hey Louise, thanks for sharing your experience with the recipe. For a less 'meaty' twist, we’ve heard a positive review about using oyster mushrooms instead of mock beef. Mock chicken or soy-based options like tofu could also be delicious alternatives ☺️

Been looking for ways to use up some vegan "beef" stock cubes I have and this was a great recipe. I did it on the hob as I didn't have precooked mock meat or edamame and also I like my veggies softened a bit but it was soo really quick and tasty
