Ok that was yummy! The sauce is soooo flavorful, the vegs makes every bites different, and the shawarma spice mix made the tofu yummy! (I had no fake chicken so I used tofu instead. Next time I'll fry the tofu first for texture!)
Great light summer meal
Tasty! Made a batch for lunches this week - will assemble day of so things don’t get soggy. Subbed in tofu for mock chicken since I had a pack that needed to be used. My only change next time might be to either shred the carrots, or maybe pickle them using the banh mi recipe - they were a little unwieldy this time around!
Sabia, where do you take the mock chicken pieces from? Are they a highly processed product? Can I use tofu or tempeh instead? Thank you!

This dish was amazing, one of my favourites so far. A properly filling salad with lots of proteins and the leftovers make an amazing lunch. Love the combinations of textures and flavours. Keeper!
Tried this with peanut butter instead of cashew (as I realised after starting the recipe i only had a teaspoon of cashew butter left in the jar!) and it was still really good. Thought I'd share in case anyone was looking for an alternative to try :)
