These noodles and PUL spicy gochujang peanut butter noodles are my top favorite! I need to make these on repeat! I did about a pound of eggplant. My husband and I both agreed the noodle to veggie ratio was quite off, which makes senses as it’s loaded with veggies! Yum! So next time I’d do more.
The soba noodles I buy are sold as a pack of 14-oz. So my plan next time is to double the recipe but do the full pack of noodles (instead of 10.6 oz), chop the green beans into bite-sized pieces, and increase the sauce to make up for the added noodles. We’ll see how it goes!
Very delicious. I used Swiss chard instead of beans and spinach (stems and leaves, respectively).
Instant hit!! Soooo good! I was careful and used only a third of the samba oelek, and it was perfect for my "little spice" taste! Will definitely cook it again, the sauce and the melty eggplant are soooo yum, and the nori on top was a perfect touch, I've added more while eating it!

Lovely weekday, post-work meal that feels healthy but not boring. I swapped aubergine for courgette, green beans for sugar snaps, and added cashews on top - just to suit my own preferences. The sambal oelek makes the difference as it gives it a nice kick and flavour without being overpowering. Will definitely make this one again 🙂
Anytime I can sneak in some leafy greens it's a plus. You hardly even notice the spinach in this one. Very yummy!
I found it a bit sweet but otherwise I loved it! I might add less maple syrup and more soy sauce next time.

BEST. SOBA. NOODLES. EVER! Made this just now and I must say I would have never thought of mixing aubergines and soba. Perfect pantry meal for a night when I really wanted delivery. Came together quickly & my husband & daughter both enjoyed it. Subbed zucchini for the eggplant, sriracha for the sambal olec & cut down on the sesame oil. Omitted the green beans cuz I didn’t have them - honestly you could sub almost any combo of veggies and I think this flexible recipe would work. If I were to make it again I might reduce the sweetness and increase the vinegar a touch (but I bet that’s a result of not having sambal). Saving us from takeout = paid for the annual cost of the app. 😁😂🥳
