Kimchi Noodle Soup
This dish is inspired by kimchi jjigae, a classic Korean kimchi stew, and so we've modified it into a filing and hearty meal. We love kimchi as a tangy condiment, but also as a way to load up a dish with tonnes of flavour. This noodle soup is packed with spicy, umami goodness and will really warm you up from the inside out.Servings

Super delicious! I had to swap some ingredients as I didn't have them on hand and swap for zucchini instead of any mushrooms as I just don't like the taste and texture and that worked really well!

This was super tasty! I made it for dinner for my boyfriend and I and he also really loved it, though he wanted it more spicy (I forgot to re-new the gochugaru in my pantry and unfortunately had to skip it because of it)! For me it was perfect because I have low spice tolerance but next time I will try it with more spice~

I had been eyeing this recipe for a long time and then had a jar of homemade kimchi from a Korean friend and had to seize the opportunity. Absolutely amazing ! Already thinking of making it again.
This is a delicious recipe,quick warm and filling.
So good! I air fried the tofu separately and added it at the end. Also used just 5 cups of water. It made a lot! Had leftovers:)

This was amazing and so quick on a weeknight. I did cut the gochugaru in half for the sake of the kids. They usually don’t care for spice. It still came out pretty spicy, but they all went back for seconds. They even asked if we could have it again! Thanks for the great recipe.
