Surprisingly filling and easy to prep. I added smoked tofu which worked well. We did find the flavour of the broth pretty mild, maybe next time I’ll add some extra miso.

So simple yet delicious. Lunch was ready in under 20 mins. The broth is fantastic and this recipe allowed me to use up a lot of ingredients I already had.
The only additions were crispy lentils i roasted a few days ago and some toasted bread.
Definitely adding this to the rotation for when I need to quickly make some food, wish I tried this one sooner!

This was great and super easy to make! I substituted the kale for spinach. I think my water evaporated too quickly in the pot so the broth was more of a sauce than actual broth, so I’ll add extra water next time. Can’t wait to have this again!

I’m so excited to make these for the first time! My only question is about the veggie boullion cube. Mine are meant for 4 cups of water (that is, each cube dissolved in 4c water is like 4c broth). I wonder if I should cut my cube in half and split between 2 jars?

Hey Vera, aw we hope you enjoy the recipe! As for the veggie bouillon cube, that is a great idea! Splitting it between two jars could work to balance the flavour without overwhelming each serving. Just be sure to give the jar a taste test before eating and perhaps add some more salt to taste if needed 🤗

I think my noodles are the wrong ones so I’m prepared for that & have some of the ingredients draining so as not to wet the noodles. I might add garlic & turmeric as am meant to have them regularly & I’ve got 2 different blended spice pots, both Middle Eastern so I might add the Lebanese as haven’t tried it yet. I may add some peppers as have them ready for the rainbow bowl recipe. If I can crack these I’m fairly sure (super fussy/veggie/cook-from-scratch/bionic palate) daughter will like them when she visits this week :)

This was an excellent quick dish to prep the night before. The only addition I would say is needed would be some soy sauce and siracha. Even with the red pepper flakes, I needed a bit more of a punch of flavor, personally. Not sure if that would cause problems with the dried noodles cause that would add moisture tho 🤔

Very good - I think I’m just addicted to salt - it needed more salt even though I did not add it because I know the miso has salt but will definitely make it again. I didn’t have green onions so I sprinkled dried onion and it was good - that explains my 4 stars

This one is amazing. Must be one of my favourite PUL recipes. I used healthier noodles and cooked them up before putting in all the other ingredients. Also added 1.5 tbsp of sambal oelek + some salt to taste.

Love it! I was worried it was gonna be bland because of there not being a lot of spices but it's not bland at all and just a really tasty, quick and easy to make soup that's great for meal prep as well!

I’ve tried making homemade soup recipes numerous times over many years being vegan and the spice ratios are never enough, leaving the flavor bland. Well, not this soup! The seasoning and blend of flavors was PERFECT and eating this felt warm and nourishing. I swapped chopped red pepper for the corn and spinach for kale. Love this soup.
