Nasi Goreng with Tofu Scramble
One of Indonesia's signature dishes is the nasi goreng. "Nasi goreng" translates to "fried rice" and often includes an assortment of veggies and some scrambled egg mixed into the dish. To give a similar appearance and mouth-feel, we created a "scrambled tofu" in this recipe.Servings

Love this. Could probably eat it multiple times a week, haha. I often make it for meal prep.
Made this for dinner today and it was amazing, even the fussy 4-year old ate it (although she picked out the beans)... I didn't have any sambal so next time I will add that for the grown ups at the end, this time we had to make do with sriracha. But the flavour was already great and it makes quite a lot too.
We really love the recipe 😊. I just use whatever veggies I got in the fridge to use leftover veggies. It works zucchini or eggplant or bell peppers or cabbage.
We didn't like it very much, because the suggested veggies don't work for this recipe in our opinion. But the tofu-scramble turned out great and we will use it in other dishes for sure.
Great recipe - similarities to the afhaal chinees in the dutch neighborhood are definitely there. But this tastes much finer and more elaborate. We‘ll cook this definitely again 🙃
My boyfriend was a little skeptical because he smelled “curry spices.” But he loved it, and of course I did too! Will keep frozen veggies and tofu on hand to make as a delicious emergency meal 😍
I wouldn't have thought of using scrambled tofu, but it made the dish taste so good! The spices and sauces were also exactly right.

Delicious! It's so cold and miserable today in Cheshire, so I wanted to make something to take us somewhere warmer. I've made vegan nasi goreng before, but never with scrambled tofu, which was so good! It definitely makes this dish feel closer to the original. Loved it!

Woah!!!!! I didn’t expect this to be so good the dish turned out looking exactly like the picture colourful and full of umami flavour! I accidentally used 300g of cooked rice ahahaha but it turned out perfect and actually fit my macros better will be making this every week !
