Creamy Parsnip Soup

Warm, cozy, and irresistibly creamy, this parsnip soup is a perfect bowl of comfort. I'm not a big soup fan, but I couldn't get enough from this soup! Also my partner ate every single last drop of the soup, because it was so good 🤣 We did make it from our first ever homegrown parsnips, but I'm sure it will also be great with store bought parsnips!

This was delicious, super creamy and filling with lots of flavour! I added five tablespoons of lemon juice and one extra boullion cube. The croutons were incredibly tasty and will be making these to put on all kids of things 😍

Very tasty and i liked the strong parsnip flavour combined with the chili. Bit what i didnt liked was the consistency. I have done exactly the measurements of the recipe but it turned out very mushy and i had to give some extra water. Maybe this is just my preference but the next time i would reduce the amount of parsnips to 500g and i think the consistency would be fine.

I'm not a huge parsnip fan but I enjoyed this. I skipped the chilli and threw in some edamame for protein and it was a great lunch.

I love this soup! I adore parsnips anyway, but this really played into the earthiness & sweetness. The hint of chilli was really great too. Excellent for wintery days.

Not my favorite from the PUL app, I found the parsnip taste a little too strong. I think next time I will add a couple of potatoes to soften the intensity a little bit

The unsweetened soy milk stil made it way too sweet unfortunately.. would leave it out next time or maybe replace it with something else.
