Inspired by a recipe my mother-in-law makes, this creamy zucchini soup is nourishing, comforting, and packed with zucchini. A subtle curry flavour adds warmth, while coconut milk gives the soup a silky finish. I especially love serving it with croutons for a lovely crunch against the creamy texture.

Made it with homegrown zucchinis and it was so simple and delicious! Will definitely make it again!

This went down well with the whole family (me, husband, 5 year-old and 10 month-old). I'm only giving it 4 because I still got a bitter after taste. I know you said to adjust the agave to taste but it feels like it would have needed more than I would have liked to have used. Would it be less bitter if I used smaller courgettes? I used 3 big ones that came up around 25g under your suggestion. I will definitely make this again. I liked how quick it was and how easy it was too. Good midweek dinner with some crusty bread.

Hello hello, Phillipa! Ah yess smaller zucchini could definitely help! Larger zucchini sometimes have a more pronounced bitterness, while smaller, younger ones tend to be milder and sweeter. You could also try using a little less curry powder next time, depending on the blend you have some can be more bitter than others. And a touch more agave (within your comfort level) can also help :) So happy it was still a hit with the whole family 🫶

Did this one today, I simplified it for my 16m baby ( no curry etc) , made it a bit thicker and add pasta to the side for her . Big win she loved it !!

I made it today and added yellow lentils for extra protein. I served it with quinoa rice on the side. If you take out a little bit of the soup before adding the vegetable broth and salt, it’s also great for the baby — everyone loved it!

Aww this sounds delicious, Atessa! Thanks for the idea to add yellow lentils, and how to make a baby-friendly portion too. Sounds like it was a hit with the whole family 🥰
