Creamy Cauliflower & Potato Soup
This dish has all the aspects of an absolutely mind-blowing soup! It has mild, sweet tones and creaminess from the cauliflower and potato, a salty touch from the vegan bacon, and crispiness from the croutons. The fried capers on top give it a little bit of a tangy flavour, a true party for your taste buds!Servings

We had some vegan chorizo sausage to hand so subbed that in for the bacon component, used olive oil instead of veg oil since we were out, and oat milk. Other than that, followed the recipe to the letter. I had seconds and hubby had thirds!
This soup would have exceed all my expectations if I had any. Absolutely delicious. The soup itself is soft and tasty at the same time, but with the toppings it becomes even better, which seemed impossible. Hearty and filing, I'm making this recipe over and over again. Thank you, PUL team!
Comforting soup for a rainy day!
I'm going to call this Cauliflower chowder! This is my first time cooking leek but all the flavors come together very well. The biggest bonus is that it's kid friendly! Tasty way to get in nutrition. It is a little time consuming though, so I'd mostly only cook this when I have time on my hands.
Un peu déçue, très peu de goût. Mais Tom a adoré
So yummyyyyy
So good and easy to make! I didn’t have leeks so used onion instead and it still turned out really good.
This was good. I didn’t make croutons but it was hearty enough without.
This was just what I needed. So cozy and delicious and easy to make!! Thank you!
Delicious 🤤
Thank you for this. I’m in a liquid diet so this was perfect. I just added some spinach to get in more greens.
Very easy to make and tastes great!
Hi PUL-Team! Can you please tell me, why you suggest cooking the soup uncovered? Isn't a lot more water evaporating this way and in the end you end up with a puree/mash consistency instead of soup? I cooked it covered and it turned out good, but I'm still curious. Thank you in advance, greetings from Vienna
Very tasty and easy to prepare. My favorite part was the fried capers. I then sautéed diced bread I. The caper oil to make croutons. Delicious!
I love that you restate ingredients on each make Paige so you don’t have to go back and see measurements. Love this app. So easy to use. Recipes always turn out well. Thankyou
Very creamy yummy soup! We just love your soups. I had no success finding vegan baking bits so we used a smoked tofu and cut it really small to make it crispy and put that on with croutons & capers! 😋
Simple to make and tastes great. Used coconut milk instead of almond milk and topped with various seeds as a time saver. One of our faves!
This was really an excellent soup for dinner tonight! Warming and super tasty with the capers. We omitted the faux bacon, but still the smoky taste comes from just the 1/2 tsp of smoked paprika! Delicious, marked as a favourite!
Couldn’t find the vegan bacon bits, but I made homemade sourdough croutons and it made up for it! Super yummy recipe! TIP: Be extra careful frying the capers..
Absolutely delicious! I used a yellow onion, roasted the cauliflower and used full fat oat milk. So good and comforting!
I love this soup, I didn’t have leeks, so I used a yellow onion instead. It was even better the next day.
Soo yummy! Instead of cooking the vegan bacon, I sautéed mushrooms with soy sauce instead.
A very satisfying and delicious recipe! Thanks!
