I only made the rice and sauce (I had a purple cauliflower and didn't want to change the colour so I baked it on the side but didn't put harissa on it), I think it's going to become a staple in our house, we already made the sauce again to eat with snacks 😸

This is soooo yummy and the yoghurt sauce really elevates the dish. I cooked 1/2 cup red lentils with the rice to add protein and replaced harissa with smoked paprika and a bit of cumin to make it less spice / more kid friendly. Will make it again ☺️
The recipe is delicious and the perfect way to use the leftover cauliflower. It's a staple dish in our house and it goes really well with PUL tofu Tikka masala
So easy to make and so tasty! Pomegranates are in season and this was the perfect recipe to pair with it. Based on other people’s feedback, I also added chickpeas for some protein and it was delicious!
Brilliant dish. Inspired by another reader, I tossed some chickpeas in the bowl that had seasoned the cauliflower, added some oil and then put them in the air fryer for 15mins at 190°. I'm looking forward to using non frozen pomegranate seeds and coriander next time.
What would the amounts be if I were to use Natur basmati rice and how long would I then cook it for?

I have kiddos that don’t eat spicy so I had to omit the harissa but used paprika powder for the similar color. I quinoa instead of rice and fresh mint instead of dried cause it’s just what I had and all in with with these changes, I loved it!! Such a versatile dish!! Pomegranate seeds gave it the perfect touch
Good substitute for pomegranate here was raisins
What a banger of a dish, this! I couldn’t get enough of the yoghurt or the rice or the cauliflower- I guess what I’m trying to say is that everything about this recipe is perfect. A must-try for everyone who already haven’t. Simple, delicious and leaves you and your guests wanting for more.
