The name is wrong, Estambali polo is with potatoes not green beans. This is "Lubia Polo" which means green bean rice in Farsi.

This tastes amazing! I also added turmeric and black pepper to the onions and topped the rice with butter before sealing the lid. I served it with Persian-style tzatziki made with walnuts, raisins, and dried mint. 😋😋😋😋

Very delicious! I only have one question: after cooking for 25 minutes without stirring my bottom is completely burnt is there a way to prevent this?

This was really tasty, even though we had to omit onions and saffron due to dietary restrictions. I added cherry tomatoes so we might have sometime else in there to chew on and that made it extra juicy.
I have a weird cooking hangup about green beans, though: I'm always panicky about whether they are cooked enough or not since I (in Germany) learned that they can be poisonous otherwise?! Is that even true? Cause my US-American boyfriend always looks at me funny when I fuss over the beans 😅 maybe you and your endless food knowledge can dispel my fear, once and for all...

We're glad you enjoyed the dish, Maria! Green beans, like many other legumes contain lectins, which are proteins that can cause digestive issues if consumed raw or undercooked. Heat can help break down lectins and make green beans easier to digest so perhaps that's what you're thinking of 🤗

This was a very unique rice recipe, very different than any I’ve tried. My kids loved the cinnamon flavor of the rice and I was on the fence. My brain kept telling me it was sweet so it was hard to eat it as a side dish. But overall, the recipe worked well and I think any dislike is a me issue for not loving this flavor profile.

Made this recipe yesterday and loved the taste! But I was wondering if there’s a way to prevent the rice from burning at the bottom? I burned quite a bit while cooking 😅

Hey Chana, using a non-stick pan and low heat can do wonders if you didn't already. Otherwise, you could also rinse your rice under cold water after soaking to help remove excess starch, which can cause the rice to stick and burn. We hope this helps for now 🤗

I love how there’s a timer! This is really good! I will definitely make it again. Reminds me of a rice dish my college Iranian dorm mate shared with me many many years ago, except it had turkey. She served it with some type of yogurt. I tried it with a dollop of vegan yogurt and it tasted very yummy!

Hey Lili, this is indeed the same as lubia polow :). There are different ways of making it, of course, some include meat for example, but this one our plant-based version. I hope you enjoy it if you give it a try!

It may seem unconventional but I would really encourage anyone who wants a change to their usual rice to give it a go - you'd be surprised at how much more flavourful, enjoyable, and nutritious meals can be by adding flavour and texture to your rice
