These potato pancakes or 'Kartoffelpuffer' can be made in different variations, but the most simple traditional one includes potatoes, onions, eggs, and simple seasoning. For the vegan version, we simply left out the eggs, as the grated potatoes hold the shape on their own very well. They are often served with applesauce, which might seem a bit unusual at first, but they pair very well together. Of course, you can choose to enjoy these pancakes on their own or as a side dish.

Excellent recipe thank you! I put the potatoes into a sieve and pressed all the water out that way! Loads came out! Resulted in very nice and crispy potato patties!

Mine browned a bit much and felt slightly undercooked. So maybe I need a lower heat setting. But these were tasty. 🥔🧅

Reibekuchen (grater cake) /Reiberdatschi... We also eat them with cinnamon-sugar, or smoked salmon and black bread/pumpernickel, or herb quark. Depending on the region. The trademark is that they are fried in a lot of fat and then the whole place stinks😂. But so delicious! That's why it's better to eat at the Christmas market or the fair. Will this one give a try🤤

Hey Paula, oh no! Squeezing out excess water from the grated potatoes after sprinkling salt helps them stay firm. Being sure to flatten the potato mixture well also helps the pancakes hold their shape. I hope this helps if you give the pancake recipe another try 🤗

I am a huge potato lover and so I absolutely LOVED these potato fritters. I did not eat them with apple sauce but might try some other day if I’m feeling adventurous 😃. Really nice yummy and crispy!
