Not my favorite :( The raw shallot was not pleasing, and I didn’t love the citrus flavor either.

In case it helps for future recipes, letting the shallot sit in the dressing for a little before eating helps reduce the sharpness. And if you have any leftovers, adding a touch more soy sauce or mirin could balance it out. We appreciate you taking the time to leave a review, and we hope you enjoy our recipe more ☺️

The recipe is great and my Japanese husband is very happy. However, I wonder if the amount for soba is very little for four people, unless it's meant as appetizer.

Tip for those who can't find mirin, substitute with equal parts rice vinegar and real maple syrup. Ex: 1 Tbsp mirin = 1/2 Tbsp rice vinegar + 1/2 Tbsp maple syrup.
