Baghrir, known as "thousand-hole pancakes," is a light, spongy North African treat enjoyed often at breakfast or teatime, particularly in Morocco and Algeria. The pancakes have different names depending on the region. These yeast-risen pancakes, celebrated for their porous texture, soak up sweet and savoury toppings like (vegan) honey, butter, or olive oil.

Can the batter be made ahead of time. That's a long time in the morning especially when it's chilly. Can I make it the night before and cook in the morning

Heyy Jacqui! That’s a great question! I wouldn’t recommend making the batter the night before because once it’s mixed, it starts to ferment and lose its leavening power, which affects the bubbles that give baghrir their signature texture. Instead, you can mix the dry ingredients the night before, then add the wet ingredients and blend again in the morning. The batter only needs about 30 minutes to rest and rise, so you can let it sit while you prep other breakfast items. If you prefer to save time in the morning, another option is to cook the baghrir ahead of time. They reheat well, just store them covered at room temperature for the same day or refrigerate and warm gently before serving. 🤗

What a fun and delicious recipe! Its like a cross between a pancake, a crepe, and a crumpets! My picky eater of a daughter ate four of these for lunch which was impressive! Calling them “1,000 hole pancakes” helps sell it to kids. We loved it drizzled with a little honey or maple syrup. Keep the delicious recipes coming! Would love to see more high protein items for breakfast.
