Coca de Recapte, is a traditional dish from Catalonia, a region in northeastern Spain. The name "Coca de Recapte" translates to "collection cake" or "harvest cake", referring to its origins as a way to use up various ingredients from the pantry or garden. Ours is loaded with vibrant bell peppers, savoury vegan sausage, and tender artichoke hearts.

My partner and I made this last week and it was lovely. We ended up using some pre-made dough at our grocery store to speed up on prep. However, the topics and everything outlined in the recipe make this taste SO good. We will add this to our list of go to recipes. The artichokes and bell peppers balance each other well.
